<Milmyeon (Wheat Noodles)>
Milmyeon is a South Korean noodle dish that originated in Busan and is a variant of the North Korean dish naengmyeon. It features wheat noodles served in either a cold meat broth (mul milmyeon) or a spicy sauce (bibim milmyeon), topped with vegetables and garnish. The dish was born during the Korean War when Northern refugees in Busan used American food rations of wheat flour to create somyeon noodles, which led to the creation of milmyeon, meaning "wheat noodle."
The basic recipe includes wheat flour and potato or sweet potato starch noodles, served in a meat broth with vegetables and medicinal herbs. There are two main varieties: mul milmyeon with an icy-cold broth and pickled garnishes, and bibim milmyeon with a spicy gochujang-based paste. Milmyeon has become a specialty of Busan and is a beloved dish in South Korea.
